The other night our plans became scrambled, due to the Eyeglass Dilemma, so we ended up making dinner after the kids went to bed. On the menu? Grilled salmon with Thai Cucumber Relish. I stopped counting after about 10 "ooooh's" and a dozen "aaaah's" ... I said to Don that out of all the salmon recipes we have experimented with, this was by far the absolute best. Outrageously easy and quick, the fresh flavors were simply amazing on top of the perfectly grilled salmon.
Make that 13 ... "aaaaahhhhh...."
